    This single-farm lot is rare in Ethiopia, where many small farms collect cherries to make lots. This coffee is refined using only cherries harvested from the fields of producer Tarik Mengesha (hereafter, Tarik).

    Located at an altitude of over 2,000m, the large temperature difference makes it an ideal environment for coffee production. The coffee is carefully managed with a high level of care, and the 74112 variety, selected by an Ethiopian research institute, is neatly planted at 2m intervals. The drying area is well ventilated, making it ideal for processing high-quality natural coffee.

    Tariq is a popular leader among the local people, and together with his efficient staff, they produce about 30 tons of coffee per year.

    The cherries brought in through the natural process are then sorted once more to ensure that only the best ripe cherries are used for the batches. They are then transported to African beds, where they are thinly spread, shaken, and sorted repeatedly over a period of about three weeks until they reach the ideal moisture content.
