It has a distinctive chamomile-like flavor and a rich sweetness like brown sugar. As it cools, it also has a bright apricot-like flavor.Buenos Aires is a prestigious farm in Nicaragua that has won the COE championship. We asked them to create a special batch for Townsfolk using a custom-made process.The farm's signature Java variety is subjected to a short anaerobic fermentation followed by a washed finish, resulting in a sweeter finish that takes advantage of the floral flavor characteristics of Java.
Buenos Aires is located in Nueva Segovia, on the border with Honduras in northern Nicaragua. The Valladarez family, who run the farm, originally lived in Honduras but moved to this area as the civil war intensified.They gradually acquired more land and now own a total of 10 farms, which are currently managed by brothers Luis Emilio and Olman, the fourth generation.
They are producers who adapt to various changes and spare no effort to produce coffee of consistent quality year after year for their continuing customers . This custom-made lot was made possible by carefully accumulating and analyzing numerical data from the process .
