    This lot is made from the Kenyan variety "SL28" and finished using a process called "Reposado White Honey."
    "Reposado" is a Spanish word meaning "rested." As the name suggests, the harvested cherries are not processed immediately but are allowed to rest for a certain period of time before undergoing the honey process. The purpose of this resting period is to enhance the sweetness.

    This is a superb lot that clearly demonstrates the vibrant acidity of the grape variety and the intention behind the processing.

    La Lia is located in the Tarrazu area of ​​Costa Rica, which is blessed with an exceptional terroir. It is one of the most famous micro-mills in the area and is run by brothers Luis and Oscar. They are frequent winners of Cup of Excellence awards, and their quality is already well-established.

    I have visited twice before, and the owner is modest, sincere, and warm-hearted. The wet mill is meticulously maintained, and the farm and facilities are always beautifully kept.
