A sweet lemon and apricot impression. A flavor where bright, sparkling acidity and sweetness are harmonized. Coupled with a silky mouthfeel, a beautiful aftertaste lingers long. This is one of the lots purchased directly from the origin. Highly recommended.This year, we are releasing a meticulously crafted lot from Finca Don Joel, which we have handled annually.The Kenyan varietal SL28 is Reposado and processed with Double Fully Washed. (Explanations of each process are provided at the bottom, so please read if interested!)Don Joel was established in 2011 and is primarily operated by Mr. and Mrs. Alan and their son.During the harvest season, the entire family works together. Although modest, their passion for coffee is strong, and despite being small-scale, they undertake various initiatives for good quality.
The RDFW process is one such initiative.
When we visited the farm, they showed us various efforts, such as rare varieties like Typica and Geisha,and aerobic fermentation of harvested cherries.
"Reposado"This method involves allowing the cherries to rest for a short period after harvesting before processing. The aim is to thoroughly permeate the sweetness of the cherries into the parchment, resulting in a lot with a sweeter impression."Double Fully Washed"In Costa Rica, it is common to use a mucilage remover machine to remove the pulp from cherries. Double Fully Washed is a processing method where, after passing through this mucilage remover, the beans are further soaked in water to remove any remaining mucilage, resulting in a cleaner flavor.
