A syrupy sweet flavor with notes of blueberry fruitiness and yellow peach. A floral finish reminiscent of violets. This is one of the lots I purchased after selecting from numerous samples during my visit to the origin.
The Shantawene Washing Station is a processing facility managed directly by the local exporter, Tracon, since 2022.It is located in the Sidama region, which is currently the most prominent area in Ethiopia.
The terroir of this area is outstanding, and in recent years, many of the winners in international competitions held in Ethiopia have come from this region.
They produce lots by collecting cherries from about 1,000 small-scale coffee farmers in the surrounding area, most of which are at very high altitudes of over 1,950 meters above sea level.
They report that they are cultivating JARC (Jimma Agricultural Research Center) selected varieties and native heirloom varieties on their own farms.

In addition to traditional Washed and Natural processes, Shantawene WS also carries out processing with various methods such as Honey and Anaerobic, and while they boast a scale with an average production volume of 6.5 containers (approximately 117 tons), they are actively working to improve quality.
During my buying visit, they spoke enthusiastically about their efforts to improve the quality of the drying process.
